Ink

For sketching and drawing with inks, the weight of the paper would depend on what you are doing, however 100gsm and heavier will work for best results. Using a smooth surface will help the ink glide over the paper which is what you want for any piece created with this medium. Similar to pencils, a pad that is aimed at sketching and drawing will work well with ink but as mentioned it would all depend on what ink you are using, for example, liquid ink might be more suited for something similar to watercolour paper.
